You have piqued my curiosity. The oil in a citrus peel isn’t very soluble in water, which is why punches are best made with an oleo-saccharum (muddle peels with sugar and let rest, and the sugar extracts the oil for you). Now I want to A-B test this.

Is the concern that the simple syrup won’t bond to the infused alcohol properly? Or is the concern that the alcohol won’t accept the citrus oils in the lime peels?

  1. dennymayo said: As I read it, the oil won’t go into water/booze without sugar - hence the need for the simple syrup. Simple syrup is less polar than booze, making a better solvent for the oils.
